Overview

Zanthoxylum piperitum fruit extract is derived from the berries or peppercorns of the Japanese or Korean pepper, also called sanshō in Japan. The plant is native to both Japan and Korea, where its leaves and peppercorns are used as a spice.

Some studies have shown that the Japanese pepper contains antioxidants, namely hyperoside and quercitrin, while other research suggests that the extracts obtained from this pepper have antibacterial potential.

It is used as a natural preservative due to its antibacterial properties, although it is important to note that natural preservatives have been shown to be less effective than synthetic ones.
