Overview

Sodium anisate is a sodium salt of an organic acid. Because of this chemistry, this ingredient is actually a base, which means it has a relatively high pH. Therefore, sodium anisate can be used to neutralize acidic solutions or raise the pH above neutral to a more alkaline level.

Sodium anisate is also known for its antimicrobial properties – specifically, as a fungicide. To create a broad spectrum preservative, it is frequently paired with sodium levulinate, which has bactericidal capabilities.

Sodium anisate can be used as a flavoring agent or a fragrance, too, due to its mild anis taste and scent.
