Overview

Sodium acetate is the sodium salt of acetic acid. This ingredient is basic on the pH scale, which means it has a pH of greater than 7.0 on a 14-point scale.

While this ingredient can be used as a pH adjuster to increase the pH of a solution, it is more frequently used alongside its acidic counterpart, acetic acid, to create a buffer system. A buffer system is one where the pH resists change when kept within a related range. In the case of acetic acid and sodium acetate, the buffer range is roughly 4.0 to 6.0.

Sodium acetate also has a characteristic odor, similar to a weak version of vinegar.
