Overview

Potassium sorbate is a naturally-occurring preservative widely used in food and personal care products for many years.

Potassium Sorbate works by inhibiting the growth of yeasts, molds, and some bacteria in order to preserve the freshness and quality of products. It is a result of potassium salt with sorbic acid and is typically in solid form as a powder or pellet. It has excellent water solubility and it has low toxicity. It mainly functions at a pH below 5.40 and usually requires an acid of some form to increase its efficacy as a preservative.

There are many grades available including food grade and Ecocert (natural). It is typically used in conjunction with other preservatives in order to control bacteria.
