Overview

Potassium phosphate is a potassium salt of phosphoric acid, which is a weak acid itself. When the salt is created, the ingredient becomes mildly basic, and it can actually react as a weak acid and a weak base, depending on the content of the product.

For this reason, it makes an excellent buffer, which is a material that stabilizes the pH of a product. In addition, it can be used as a pH adjuster – generally as a base, which would increase the pH to a more alkaline level.
