Overview

Pectin is a polysaccharide extracted from various types of fruits (most commonly citrus rinds and apples). It is used as a thickener and gelling agent in skincare products.

Pectin is the molecule that forms in your apple or redcurrant jam when you cook it, and it creates a jelly-like consistency. It is the key ingredient in so-called “jam sugar” and, for proper gel formation, requires an acidic pH.
