Olea europaea (olive) oil unsaponifiables is the fraction of olive oil which is left after the process of saponification, or recovery of olive oil fatty acids.
These unsaponifiables consist of sterols, fatty alcohols, tocopherols (vitamin E), carotenoids (pro-vitamin A), and other fat-like substances. They have emollient properties.
