Overview

Lecithin can come from sunflowers, soy and eggs. It is an emulsifier best suited for water in oil emulsions, but it has other noted benefits as a humectant.

The downsides to lecithin are that compared to other available emulsifiers it isn’t the best stabilizer, and it causes extra burden on the formula’s preservative because it is nutritious.
