Citrus junos, also known as Yuzu, is a citrus hybrid of the mandarin orange and the ichang papeda, which originated in central China. It is unusually frost-hardy for a citrus fruit and is widely used in Japanese and Korean cuisine and traditional medicine.
Yuzu fruit extract is made mainly from the peels that are discarded after juicing. The peels contain large amounts of essential oil, comprised mainly of limonene, which gives it a fresh, lemony, citrus scent.
Other important constituents are flavonoids, which have antioxidant and anti-inflammatory properties.
