Cinnamomum cassia bark extract is an extract obtained from the bark of the Chinese cinnamon, one of the species of trees used as a spice.
The extract has a warm cinnamon smell and is used as a fragrance, with some added antioxidant and antimicrobial effects.
Chinese cinnamon is used alongside its cousin, Ceylon cinnamon. The two are almost indistinguishable by smell, but they look very different: Chinese cinnamon is one thick layer of rolled bark, while Ceylon cinnamon is made of many thin layers and is much more difficult to grind into a powder.
The cinnamon scent comes from a volatile essential oil consisting mainly of cinnamaldehyde (up to 75% in Chinese cinnamon).
