Overview

Centaurea cyanus, or Cornflower, is a common weed that grows in fields of corn and wheat. It is also grown as an ornamental flower for its lovely bright blue color and is a national flower of Estonia. The flowers are edible and used in salads or herbal teas.

Centaurea cyanus flower extract contains a complex blue pigment called protocyanin, as well as other anthocyanins (plant pigments), flavonoids, and organic acids – which have antioxidant properties.
