Bromelain is a mixture of protein-degrading enzymes extracted from the pineapple plant. It is the thing that makes your mouth burn after eating fresh pineapple - the enzymes have started to break down the proteins of your mouth mucosa. The entire plant actually contains bromelain, and not just the fruit, which is why it is often obtained from the leftovers after juicing.
